I'll do my best to answer.
The MAFTpro works like the SAFC in that it does alter the MAS signal to adjust fuel trims. This will allow you to retain the stock ECU safety features. Without converting to speed density, it still has AFR tracking (if you have a wideband) that makes it much better than the SAFC. You can also add a MAP sensor and boost control solenoid to control boost. I think in a lot of ways it is similar to ECU plus, but with an option for speed density and boost control.
When used in speed-density mode, you have all the control I mentioned above, but you can also tune based on load cells. There is a VE table with load points for various RPM and boost pressures so you can tune part-throttle, full-throttle, idle, and every point in between directly.
Timing control has not yet been released, so I'm not sure how that will work, but I'm guessing it will modify the crank angle and cam angle sensor signals to adjust timing.
