To roll or not to roll rear fenders
I am about to install Eibach Multi Pro R2 coilovers on my Evo X. I have BF Goodrich G Force Sport Comp 2 tires-275/35/18 on Enkei RPF1 18x9.5 +15 offset. I am getting really mixed opinions on this. The guy that said he would do this and who has done Xs before says that the paint won't crack if it is heated enough. A body shop man who has done Xs claims that even the most professional roll will make a hairline crack at the least which will end up cracking paint over time. I have watched the video on fender rolling and have read comments by people who have said that their paint did not crack. I would appreciate input on this.

Do it yourself, get the roller, and take your time.
It is stupidly easy to do. If the paint does crack (which it did on the first side for me) then get some rubberized undercoating and spray over that area. It cracks under the lip where you can't see it, so not a big deal. And the rubberized undercoating will protect it. I rolled mine 2 years ago and no issues from it. There's no way you will clear 18x9.5+15 with 275 tires anyway.
It's ridiculously easy to do, just be generous with the heat gun, take your time, and use the proper tool.

It sounds to me like it's not whether you should roll or not but that you must roll and wonder if it will damage your fenders. (Hi guys/gal, new to the forum and Evo) I used to roll fenders (taking a break from it for awhile) and I second what ddawg1130 said. Get the fender hot to the touch with a heatgun and you should be fine, and work sections at a time (not the whole fender at once).

I talked to a professional about this, and due to Mitsubishi's thin paint eventually it will Crack, he's seen it himself.
Another thing is if you live in a cold climate, the weather + salt can work it's way in and rust and then your screwed.

Idk about Mitsu's thin paint (cuz I'm new to the whole Mitsu/Evo) but I'd done/rolled tons of Toyota/Lexus, Infiniti, Hondas/Acuras, and or Domestics with no issues. I'd just done/rolled a Lancer (buddy of mine) so we will see how it holds up in Mn winter.

Again... if it cracks anywhere it will be on the underside where it isn't visible unless you stick your head into the wheel well and look up. So if it cracks there, then just spray it with some rubberized undercoating or anything else (like rustoleum) to protect it and you're fine
So to make this simple:
1) get the fender rolling tool (borrow it, ask local racing communities...)
2) Take your time, use plenty of heat
3) Well, there is no 3, it's honestly as easy as 1&2
