Which ECUflash maps need to be changed for running bigger injectors?

Let's say if I put in 800cc injetcors, the Fuel Injector Scaling map will need to set at 800. Is that it? or you need to adjust the fuel maps as well in order to get it idle and running properly before going to the dyno?

No. You do not scale injectors to rated size.

You need to scale them correctly in the ecu by datalogging short term fuel trims at cruise. You also need the correct injector latencies and then the whole fuel and timing maps, MIVEC, etc need to be tuned.
